Mackerel, wonderfully in abundance around Dawlish and easily caught (it must be because I manage it!)

It is an oily fish, rich in flavour and an excellant source of omega 3. However mackerel does spoil easily, it must be gutted as soon as it is caught and must be eaten within two days of eating

As an oily fish, it is quite versatile but best suited to dry heat methods of cookery; baking, frying, grilling and BBQ (although it can be soused) and also an excellant fish for smoking
