my favourite sandwich? well let's just say another of my favourites, there are so many great sandwiches it's hard to choose

the original sandwich of course is said to have been created by a staff member of the Earl of Sandwich, who was a reknown gambler and often ate at the table. So a staff member put meat between bread, to keep his fingers clean.

Appropriately the, the Club Sandwich is said to have been created in a gambling house in New York at the end of the 19th century. Sometimes it has just two slices of bread, sometimes three and made into two layers. The essential ingredients are cooked chicken breast, bacon, boiled egg, lettuce, mayonnaise and sometimes tomat

how it is layered is up to you, personally I prefer to keep the chicken and egg in separate layers. It seems a bit rude to me, almost perverse, to put the chicken and the egg together, "mother and child reunion" as Paul Simon put it  ;-) 


bread slices 3 pc
chicken breast - cooked 1 pc
bacon slices - streaky 3 pc
egg - boiled 1 pc
lettuce   sq
mayonnaise   sq
  1. grill bacon until crisp
  2. cut lettuce into chiffonnade (finely shred), bind half of it with a little mayonnaise
  3. thinly slice the chicken breast and egg
  4. lightly toast bread and lightly butter
  5. to construct sandwich
  • cover first slice of toast with the chiffonnade bound with the mayonnaise
  • place on thin slices of chicken
  • cover with second slice of toast
  • cover this with the remaining chiffonnade, bacon and slices of hard boiled egg
  • place on third slice of toast
  • secure with toothpicks on each side and cut diagonally into two or four

chef notes

the lettuce can be torn into small pieces if prefered or left whole

serve with a selection of pickles and shoestring fries or chunky chips for a superb brunch dish
