shrikhand is a popular dessert from the Maharashtra region of India (north west). After a selection of great Indian dishes for your main meal, I always find shrikhand is a perfect way to finish and helps settle the tummy
while not authentic, I do love to pop the mixture into the freezer for an hour to really chill it down, to the point of ice starting to form

| almonds - ground | 1 - 2 | tbs |

- add a small pinch of saffron to the milk and warm gently in the microwave to infuse
- allow to cool and add to the yoghurt
- add half the cardomom and honey, stir to combine
- taste and add more as required to suit own taste
- stir through the ground almonds
- pour into serving glasses and chill well
- serve with chopped pistachio sprinkled on the top
